Carnitas (Pulled Pork Tacos)
This has become a staple recipe in the Seibert house for the last 3 months. Best on a weekend day, where you put it in a pot, cover and let it cook low and slow in the oven for hours. The recipe calls for Pork Loin Roast, but you could use a pork shoulder too. You can sear it on the stove top, or sear it on a gas or charcoal grill (personal favorite.) You can use beer to let the meat braise, or you could use chicken stock or just plain water. The alcohol cooks down and depending on the beer you use it will create a distinct taste. Have sides (avocado, salsa, cheese, sour cream etc..)
