Do you love French Toast but you are vegan? If you said yes to both then this is the perfect breakfast for you. Even if you aren’t vegan and do like eggs, I recommend you try this simple and delicious recipe. I used Food For Life Ezekial cinnamon raisin bread which is delicious. Instead of a traditional egg batter, I blended bananas and a few other ingredients to make a nice batter that the French Toast cooked very well with. It important you blend the banana mixture so that it coats the bread properly when you cook it. The peanut butter maple topping is very easy and adds another dimension of flavor and texture to the dish.

Fat-1g/Carbs-85g/Protein-12g/ Fiber-10gFrench Toast Ingredients:1 large banana
1 tsp cinnamon
1 tsp coconut sugar
1 tsp vanilla extract
1 tsp maple extract
1/4 cup unsweetened almond milk

4 pieces cinnamon raisin Ezekiel Bread

Peanut Butter Topping:

1 TBS natural peanut Butter
1 TBS pure or sugar free maple syrup

Microwave peanut butter and syrup together and stir until well incorporated.


1.) Mix all the french toast ingredients together with a blender and then pour into a large bowl.

2.) Heat a pan on medium heat and put 1 tsp of coconut oil in the pan or non-stick cooking spray.

3.) Place one slice of bread into the batter. Submerge or flip the bread to make sure it is fully coated.

4.)  Place piece of coated bread into pan and allow to cook (2-3 minutes). Flip bread over and continue to let cook another (2-3 minutes). Repeat three more times for remaining bread.

5.) Top the french toast with peanut butter topping.
